So, Y’all know that over the years I’ve done every diet/fad out there. From meatless, to paleo to keto, BUT our most recent diet change has been cutting out a lot of sugar. We are working on less of a “fad diet” approach and more of a “total lifestyle” approach.
We haven’t gone totally sugar free, BUT I’ve done my best to cut out as much refined sugars as possible.
There’s only one problem with my plan to cut out so much sugar….
I have a h u g e, GIGANTIC sweet tooth.
I’m talking HUGE.
And the other thing that makes going sugar free – or I’ll say “sugar reduced” is that I don’t really care for most sugar alternatives. But I have found a few that I don’t absolutely loathe like Truvia, Honey and Agave Nectar. So one of my favorite things about all these new “dietary restrictions” is the challenge of creating delicious food that follows the new guidelines I’ve set for myself. And let me tell you – food without sugar is a lot harder than food without meat!
refined sugar free froyo sandwiches

My kids (and I) LOVE ice cream, but it’s not exactly the “healthiest” thing around. However, it is pretty easy to find and make a healthier alternative to it! My son has been begging for ice cream sandwiches lately so I set out to put together a sugar free treat for him!
I put together a “sugar” cookie using a simple sugar cookie recipe but replacing the sugar with Truvia!
To make the FroYo I took plain yogurt and mixed in raspberries, coconut and agave nectar. And the whipped cream layer is just whipped cream spread out on a pan and sprinkled with coconut! And I just tossed these in the freezer until they were frozen through. (Sorry I can’t give you a very accurate time frame, our appliances are literally older than me so it always takes longer for things to freeze in my freezer than it probably would yours!)
I have to say, the whipped cream layer really made it sweet and light while the frozen yogurt kept it feeling more like a traditional ice cream treat.

Yum!! I love the combo of raspberries and coconut that you use in here. I’ve done a froyo at home with my son by using plain greek yogurt, 100% grape juice, and peanut butter – like PB&J froyo!! We’ll sometimes make it “in a bag” style and shake it around until it’s done. I can’t wait to try your recipe.
